Default Lokie or Twiztid, help me rig up this Delta!

Well since you two cats are well known for building circuitry, I figured I'd direct the post primarily at you guys.

To make a long story short, I have plans on removing the 20x2 LCD unit from my Vapochill (but of course still leaving the actual chillcontrol board in place), and replacing it with a CrystalFontz 635 (thats a 20x4 5 1/4" LCD display). This of course, will take some dremeling but thats the least of my issues. The big ? is I need help designing some circuitry to be able to hook the 120MM 220CFM delta fans into this unit. I plan on replacing the intake AND exhaust fans of the vapochill with these and as many may or may not know, these fans require over 3 amps to start, and a continuous current draw of almost 3 amps for full speed! Now of course, 220CFM is something to write home about but 65Db is not! I want to be able to have these fans on full blast for a performance or show off mode sort of thing, and then have them stfu when I want a little R&R. The crystalfontz display can monitor and control (via gradient!) up to 4 fans. unfortunately, I know damn well that this thing will not be able to output 3 amps on one channel, much less total combined power. Hell, even most (if not all) pot based rheobus controllers can't handle that!

So what I'm asking here, is if It's possible to rig up some sort of variable voltage relay. I'm not so much looking for a two setting, low speed or high speed relay, but something that could take the voltage output from the Crystalfontz, relay it to a beefier controller and then power the fans in accordance to what the crystalfontz is actually outputting. Of course all without frying the CrystalFontz.

I'm not even sure if this is possible (although I don't see why not with some IC's and a little brainstorm), but if it is I'd really appreciate being steered in the right direction.
