Default More Culinary Delights From The Peanut Gallery

Well, I decided to be lazy today and post something simple for you fine folks. So, what IÂ’ve got for you are some tasty recipes from the Caribbean. If you liked my Jerk Sauce/Jerk Chicken recipe from a short time ago, youÂ’ll love these!

Jonkanoo Shrimp

Ingredients:

450g (2 lbs.) jumbo shrimp
10 ml (2 tsp.) Walker's Wood Jonkanoo Hot Pepper Sauce
15 ml (1tbsp) red wine vinegar
50 g (2 oz) butter (or substitute)
Dash of salt to taste
3 cloves of garlic, minced
1 lemon, cut into wedges
1 bunch of fresh parsley, chopped fine

Preparation:

In a large skillet melt butter over a low flame. Add garlic and cook lightly. Mix in Vinegar, Walker'sWood Jonkanoo hot pepper sauce, and shrimp. Sauté for about a minute. Remove and spread coated shrimp, in a flat ovenproof dish. Place under a hot grill until sizzling for about 3 minutes (do not overcook). Garnish with white parsley and lemon wedges. Serve with rice of your choice.

Banana Fritters

Ingredients:

2 large bananas, barely ripe
Lime or lemon juice
Batter
Vegetable oil for deep frying
Sugar for tossing

Batter

2 oz flour
1/4 tsp salt
1 egg
1/4 pt milk
1/4 tsp baking powder

Preparation:

Batter

Sieve the flour, baking powder and salt into a bowl. Make a well in the center, break the egg and add it to the flour. Add a small quantity of milk and stir. Continue adding the milk gradually, stirring all the while, until all the milk is added and the batter is of a smooth consistency. Beat for about 5 minutes, cover and set aside.

Fritters

Peel and slice the bananas diagonally into 1/4 inch pieces. Coat thoroughly with batter. Heat the oil and fry the coated banana pieces until golden brown. Drain and sprinkle with lemon juice. Toss in sugar and serve hot.
