First salt & pepper, maybe add some onion powder and curry. Then turn them red with chili powder, (Don't worry chili wont make them hot.) Rub in and best to let marinate for a few hours to overnight. Cook @ about 250 degrees for about 4 hours. And they'll fall of the bone

| I usually start with Famous Daves Rib Rub - works great on anything piggy. Now, how are you planning on cooking the ribs? A cheap charcol grill, some wood chips (check near the charcoal at the supermarket), a cheap thermometer, and careful control of the air vents, can give you amazing smoked ribs. I try for 215-220 degrees for 4-5 hours. Don't but any sauce on until the last 30 minutes or so - otherwise, it'll burn, and ruin the taste. This method, done right, will give you ribs that your friends will die for - but much like modding, you may make a mistake or two on the way. If you're not that patient, try boiling them If you're not patient and don't want to boil them, start of with the rub, grill until they're almost done, slather some sauce on them (the BBQ sauce really doesn't matter as much as the rub), and they should turn out decent. | ||

There are a few ways to cook ribs. For back ribs: Either low and slow like they do in competition, cook over very low temps in a smoker for long periods and watch the fire very closely. This one is the hardest to get right, most of the time the ribs will come out dry or overcooked on a standard grill. One of the best rib shacks I know does the cooking in a two part process. They first boil the ribs, then they grill them over a medium hot flame to get a nice caramel color, and the last few minutes they apply bbq sauce and let that caramelize a bit. This is a much faster method and doesn't need a smoker. Not having a smoker, this is normally what I do at home. I also use a little cast iron smoker box filled with soaked wood chips for flavor. I like mesquite and its easy to get here, hickory or fruit wood works too. A really easy method for individually cut spare ribs is a crock pot. Drop 'em in, cover with a bottle of your favorite sauce and cook on low until they start to fall apart with a fork.

| Add favorite spice rub and smoke them slowly for 4 or 5 hours depending on the size of the rack you are planning for dinner. I always like to smoke my ribs with an apple and some hickory wood. After the wait I have to ware a bib cause I'm drooling by the time they are done ![]() | ||
