I can't remember the exact procedure in Vista, but the only really clean way you are going to do this is to create a new user with the name you want and to copy the settings over to this new account from the old one.

You CAN change the account name through the administration tools all day long, but the folders retain their original name, so you'll always see 'Office Depot'. This is why I suggest creating a new account and copying the settings/files.
